The Industry Problem...

We looked at the market for current liquor/food inventory solutions and found no product that addressed the real world issues of how liquor/food is sold and how portions are affected by modifiers such as Rocks, Up, Double, and Neat. Our criteria was to find integrated POS / Inventory solution that was fast at the bar and recorded all usage by brand. There were virtually no products on the market that met the criteria. Not one mainstream integrated POS / Inventory solution currently can provide an accurate enough theoretical usage for Liquor, Beer, Wine and Food.

  • We evaluated multiple POS solutions and found that being quick at the bar and capturing all the relevant sales data was done best by ALOHA Table Service POS.
  • In surveying the Bar/Nightclub industry most operators made a half hearted manual stab at controlling costs. Some larger and mid size operators pay third party companies from $100-$300 a week just to get a representative liquor cost percentage report via a physical inventory and purchase analysis.

The problem we found was that universally the generation of a REAL theoretical usage was always based on deficient POS sales data that had inherent flaws in the detail of what was exactly sold. Weekly sales revenue of $1,000.00 for "Rocks" was never product specific. The open Liquor Category represented to high a percentage of most operators sales. So operations that focus on cost controls get a cost % that's fairly consistent on a regular basis.

Most Operators just hope that their beverage percentage remains consistent and feel that that's the best that they can hope for. The question becomes is the goal consistency or accuracy? Somehow the industry seems content to operate within a percentage mindset that no one can quantify or verify. Operators as a group fall into the trap of consistency in overall cost percentages as being a valid measurement of profitability. As an industry no one has any idea if the reported percentage is meaningful or accurate. Until sales and usage are truly correlated the industry will continue the traditional hospitality gut percentage beverage management technique.

  • Translate lost shots into lost retail dollars and it's easy to see why the market needs a better way to analyze liquor usage productivity. We found that universally the industry is under-charging for Up-Pours on premium liquors. $ .50 is not a real world price for a shot of Stolli in the year 2008. The nature of the drinking public's desires has also made liquor inventory control more difficult. Customers are commonly calling two and three liquor drinks and bizarre shots are becoming the norm.

Our contention is simple, until Portion Modifier there was no way to easily measure profitability by liquor brand in relation to usage and revenue. If you have an Aloha POS system and a commitment to become more profitable then consider taking control of your inventory. We think a 3%-5% improvement justifies the investment!!!

Food Modifiers

  • This particular piece of Inventory Control has always been a challenge to our customers. CCI has now created a way for those tough to handle situation where the food portion changes depending on a condition of the recipe.

    For example: Take Out - every take out order adds to the costing of the overall recipe, your styrofoam package, fork, knive, napkins etc increase the recipe cost.

    Now with CCI and Aloha POS we are able to break apart the information and trigger extra packaging when the Take Out button is hit.

    CCI can handle your multiple flavours concerns, simply create one recipe with all flavours that could be selected by the consumer and we can deplete only the flavour that is used at the time of sale. Many recipes are the same in content but a slight change in an ingredient will affect inventory depletions. With this method only the item used is depleted and no extra work is needed by the User to accomplish this.

  • Our Portion Modifier module is an extremely flexible addtion to our software. This feature is limited to a Parent/Child POS reporting system like the Aloha POS.
